Although the white-colored substance was first observed two decades ago, only recently was it confirmed to be pasta\u2019s favorite topping.<\/p>\n<aside class=\"single__inline-module aligncenter wp-block-nypost-editor-primary-tag\">\n<\/aside>\n<figure class=\"nyp-slideshow-modal-image wp-block-image aligncenter size-large\"><figcaption>Scientists uncovered 3,600-year-old mummies accompanied by kefir cheese. <span class=\"credit\">Wenying Li<\/span><\/figcaption><\/figure>\n<aside class=\"single__inline-module alignright\">\n\t<\/aside>\n<p>\u201cFood items like cheese are extremely difficult to preserve over thousands of years, making this a rare and valuable opportunity,\u201d said researcher Qiaomei Fu. \u201cStudying the ancient cheese in great detail can help us better understand our ancestors\u2019 diet and culture.\u201d<\/p>\n<p>Mitochondrial extract \u2014 found to contain both cow and goat DNA \u2014 was taken out of three different tombs upon learning of the culinary preferences of the Xiaohe. Unlike customs in Greece and the Middle East, different kinds of animal milk were separated into batches of cheese.<\/p>\n<p>The presence of fungal bacteria consistent with modern-day kefir grains was also found, which allowed the team to trace its lineage. <\/p>\n<p>One in particular, the current cheese-making\u00a0Lactobacillus<em>\u00a0<\/em>bacteria, appears to have stemmed from both China and Russia. <\/p>\n<p>Previous beliefs had the strain exclusive to Russia\u2019s Caucasus Mountains.<\/p>\n<figure class=\"nyp-slideshow-modal-image wp-block-image aligncenter size-full\"><figcaption>Cheese was discovered in ancient China that had been used on mummies of the Bronze Age. <span class=\"credit\">Yimin Yang \/ SWNS<\/span><\/figcaption><\/figure>\n<p>The study also reveals that the bacteria may have led to the stabilization of genetics and enhanced milk fermentation over time.<\/p>\n<p>\u201cThis is an unprecedented study, allowing us to observe how a bacterium evolved over the past 3,000 years.
