But for many people, it\u2019s hard to do, because they aren\u2019t excited about veggies or just don\u2019t like them.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003d3b6m171dexeo@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            A lot of people\u2019s first experience with vegetables in childhood is having them steamed, and while steaming works well for some veggies, they don\u2019t all taste their best that way, said Caroline Chambers, author of the new cookbook \u201c<a href=\"https:\/\/www.amazon.com\/What-Cook-When-Dont-Cooking\/dp\/1454952717\" target=\"_blank\" rel=\"noopener\">What to Cook When You Don\u2019t Feel Like Cooking<\/a>.\u201d\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003e3b6mg48m70xv@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            Learning to love vegetables might mean expanding your understanding of the possibilities when it comes to cooking them, she added.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003f3b6m3u3jw6a4@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            And though you might want to stick with your one favorite vegetable all year round, plants really do taste better \u2014 and can be more fun \u2014 when eaten in their right season, said Chambers, who is based in Carmel Valley, California.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003g3b6mlus8xq9u@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            Fortunately, Chambers specializes in making food fun and exciting without much fuss. She started her career as a caterer, then became a recipe developer. Corn, green beans, tomatoes \u2013\u2013 all of those things are delicious, either raw or with like three minutes of cooking,\u201d she said. (The same is not true, she noted, for brussels sprouts, butternut squash and sweet potatoes.)\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003o3b6m7kk6vmei@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            \u201cTo get those things to taste really delicious, you have to roast them at a really high temperature for longer than you think,\u201d she added.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003p3b6mtkbk88qo@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            When roasting veggies, the trick is to keep your oven between about 400 degrees Fahrenheit to 425 degrees Fahrenheit for about 35 to 40 minutes and even longer for squash, Chambers said.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003q3b6mit921vd1@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            Roasting at higher temperatures helps you get the right texture, taking out the sulfur taste from brussels sprouts and giving squash a sweet caramelization, Chambers said.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003r3b6mqwggxpfr@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            \u201cI don\u2019t want any roasting to happen in the 300 (Fahrenheit range). I want 400 and above for 35 bare minimum minutes, probably closer to 450,\u201d she added.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003t3b6mb8scoef4@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            How do you know when you have it right? Texture can be a good indicator.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003u3b6m58d2sbds@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            The crispy outside is nice, but it is important to pair that with a tender inside when it comes to these winter vegetables, Chambers said.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003v3b6mio3ve7ej@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            \u201cThat\u2019s where the high heat comes into play,\u201d she said. \u201cHaving them up above 400 helps the exterior get a little bit crispy, so that contact with the sheet pan will get the exterior of the brussels sprouts nice and crispy, while the inside is like tender and melts in your mouth.\u201d\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit003w3b6mwgjwz24s@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            You can turn your vegetables to get them to cook evenly, but Chambers finds she often doesn\u2019t need to do so. A little olive oil, salt, pepper and garlic go a long way \u2014 or use store-bought sauces to make your weeknight evenings easy and exciting.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit00423b6mzw3ss4jj@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            A green goddess dressing \u2014 which typically contains ingredients such as a cream, herb mix and lemon \u00ad\u00ad\u2014 or premade pesto can add brightness to a variety of dishes, she said.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyfeit00433b6mxyckt77e@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n Arrange a few layers of paper towels on a rimmed baking sheet, then pour the drained chickpeas on top. Use another paper towel to pat them dry. Discard all the paper towels, then shake the chickpeas into an even layer. There will be some chickpea skins on the baking sheet now \u2014 no need to pick them out. They\u2019ll roast up into crispy little bits and be delicious.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00623b6mw3pic2rb@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            4. Cut the carrots on the diagonal into \u00bd-inch-thick slabs and thinly slice the onion. Add the carrots, onion, olive oil, harissa, honey and 1 teaspoon salt to the chickpeas and toss to coat well.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00633b6ml51vhi4i@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            5. Roast until the carrots are golden on the outside but fork-tender, 25 to 30 minutes.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00643b6m89qn91kg@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            6. Meanwhile, in a blender or food processer, combine the feta and yogurt. Zest and juice the lemon into the blender and add a pinch of salt. Blend on high speed until smooth, scraping down the sides as needed, 30 to 45 seconds. If it\u2019s too thick and your blender is having a hard time mixing, add a bit of water, a splash at a time, until the desired consistency is achieved.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00653b6mwip6pgbw@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            7. Chop the herbs and nuts.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00663b6mo5q16xhs@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            8. Remove the roasted veggies from the oven and transfer to a cooling rack. Taste the veggies and add more salt as needed. Stir in the herbs.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00673b6mljyg208e@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            9. Spread a nice spoonful of whipped feta over the bottom of a bowl or plate and top it with a pile of roasted veggies and a sprinkle of nuts. Add another dollop of harissa on top if you love spice.\n    <\/p>\n<p class=\"paragraph inline-placeholder vossi-paragraph\" data-uri=\"cms.cnn.com\/_components\/paragraph\/instances\/cm1uyx8dk00683b6mendpkn8w@published\" data-editable=\"text\" data-component-name=\"paragraph\" data-article-gutter=\"true\">\n            <strong>Shortcut:<\/strong> Skip the whipped feta and just crumble some feta on top.
