He has owned and worked in Dallas restaurants for more than 45 years.<\/p>\n<p class=\"body-text-paragraph\">\u201cI just hoped it had gotten here three to four years earlier.\u201d<\/p>\n<div class=\"dmnc_features-cta-social-cta-social-module__YgCAW md_pb-9 md_mb-7 md_pt-9 md_mt-7 pb-6 mb-9 px-9 w-full h-64 bg-blue-light border-t border-b border-gray-light pt-6 mt-9\">\n<div class=\"dmnc_features-cta-social-cta-social-module__P1yIN inline-flex col-span-1 row-span-1 pb-4\">\n<div class=\"dmnc_features-cta-social-cta-social-module__vRSrF flex-auto w-full\">\n<p>Eat Drink D-FW<\/p>\n<p class=\"dmnc_features-cta-social-cta-social-module__zWZy- mb-4\">The latest food and drink reviews, recipes and info on the D-FW food scene.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<p class=\"body-text-paragraph\">Pyles is semi-retired now. Several of his former restaurants might have gotten Michelin attention, including Dallas Arts District restaurant <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2020\/01\/02\/chef-stephan-pyles-is-closing-flora-street-cafe-and-retiring-from-restaurant-ownership\/\" target=\"_blank\" rel=\"noopener\">Flora Street Cafe, which closed in 2020<\/a>. \u201cBittersweet\u201d is the word Pyles uses as he reflects on Michelin\u2019s long-awaited entry into Texas.<\/p>\n<p class=\"body-text-paragraph\">Michelin chose to come to Texas in mid-2024 after <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2024\/07\/16\/michelin-guide-texas-reviews-dallas-fort-worth-restaurants\/\" target=\"_blank\" rel=\"noopener\">representatives from Dallas, Fort Worth, Austin, San Antonio and Houston partnered up<\/a> with Travel Texas. Like a fine French wine, the behind-closed-doors deals took years. The visitors\u2019 bureaus paid a reported $900,000 in total, and Michelin was officially in Texas.<\/p>\n<p class=\"body-text-paragraph\">\u201cTexas definitely has something to say on the world global culinary stage,\u201d said Gwendal Poullennec, international director of the Michelin Guides, on the day of Texas\u2019 first ceremony.<\/p>\n<p class=\"body-text-paragraph\">\u201cThe inspectors in Texas were very much impressed by the diversity [of cuisines].\u201d<\/p>\n<p class=\"body-text-paragraph\">The attention from one of the world\u2019s most recognized star-rating systems is likely to make the state\u2019s culinary scene more vibrant.<\/p>\n<p class=\"body-text-paragraph\">\u201cI think it\u2019s going to absolutely up the game,\u201d Pyles said. \u201cI think it\u2019s going to put everybody on their guard. Because everybody wants one.\u201d<\/p>\n<p class=\"body-text-paragraph\">The Michelin Guide also has the opportunity to bring more international tourists to Dallas, Fort Worth and Texas\u2019 other major cities. The Wake and Bake is a cold brew and blueberry vodka drink while the Rye and Pumpkin is a whiskey drink focusing on an autumnal favorite. As the name of the restaurant suggests, the bar has a stout selection of whiskies and spirits-based dinners, like the $400 per person Whistle Pig event on Nov. 21, 2024, with nine courses and cocktails.<\/p>\n<p class=\"body-text-paragraph\">Rye has a speakeasy next door called Apothecary, which we called <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2021\/07\/09\/apothecary-bar-on-greenville-avenue-is-dallas-most-impressive-date-night-spot\/\" target=\"_blank\" rel=\"noopener\">\u2018Dallas\u2019 most impressive date-night spot<\/a>\u201d in 2021.<\/p>\n<p class=\"body-text-paragraph\"><i>Rye is at 1920 Greenville Ave., Dallas.<\/i><\/p>\n<h2 class=\"body-text-header\">Bib Gourmand awards given to Dallas-Fort Worth restaurants<\/h2>\n<p class=\"body-text-paragraph\">Michelin\u2019s Bib Gourmand restaurants in Dallas-Fort Worth are:<\/p>\n<h2 class=\"body-text-header\">Cattleack Barbeque in Dallas\/Farmers Branch<\/h2>\n<p class=\"body-text-paragraph\">Open just a few days a week for lunch only, Cattleack Barbeque has managed to maintain its status as a restaurant worth the hour-long wait. Fans know to show up at 10 a.m. (or earlier) on Wednesdays, Thursdays, Fridays and First Saturdays for some of the best brisket in the state. Cattleack Barbeque is at 13628 Gamma Road, Dallas.<\/p>\n<h2 class=\"body-text-header\">Gemma in East Dallas<\/h2>\n<p class=\"body-text-paragraph\">American bistro Gemma\u2019s owners, married couple Allison Yoder and Stephen Rogers, re-imagined the restaurant in fall 2023. That appears to be just in time for Michelin\u2019s inspectors, who surely had the pleasure of watching this neighborhood bistro fine-tune itself 10 years in. We can\u2019t know what Michelin critics ate, but we hoped they tried one of each of the frites dishes: mussels, chicken, steak and duck. Gemma is at 2323 N. Henderson Ave., Dallas.<\/p>\n<h2 class=\"body-text-header\">Goldee\u2019s Barbecue in Fort Worth<\/h2>\n<p class=\"body-text-paragraph\">Called Texas\u2019 No. 1 barbecue joint by Texas Monthly in 2021, Goldee\u2019s is one of the most famous smoked-meat spots in the United States right now. We\u2019re glad it got the Bib Gourmand nod, but we\u2019re surprised Michelin\u2019s critics didn\u2019t like it even more. Goldee\u2019s opened in February 2020 \u2014 unforseen but terrible timing \u2014 and managed to survive and thrive through the COVID-19 pandemic. The owners now have a spinoff ribs joint called Ribbee\u2019s. Owners David and Jennifer Uygur \u2014 he, the chef, she, the sommelier \u2014 sell house-made pasta, chef-made salumi and secondis like poached halibut and Wagyu bavette. The dining room is small, just nine tables, and it seems they like it that way: It means delightfully personal service and a closeness to the kitchen that large restaurants can\u2019t achieve. Michelin gave it a puzzling Bib Gourmand, meaning a several-course meal could total $50. Most times we go, it\u2019s hundreds of dollars for a couple. Lucia is at 287 N. Bishop Ave., Dallas.<\/p>\n<h2 class=\"body-text-header\">Mot Hai Ba in East Dallas<\/h2>\n<p class=\"body-text-paragraph\">Vietnamese-French spot Mot Hai Ba is a tiny place. All the better for snacking on bao buns filled with brisket, curries of several kinds, and the restaurant\u2019s beloved shaking beef in a cozy restaurant. We have to hope Michelin critics enjoyed chef-owner Peja Krstic\u2019s delicious, inexpensive garlic noodles, just $10. Mot Hai Ba is at 6047 Lewis St., Dallas.<\/p>\n<h2 class=\"body-text-header\">Ngon Vietnamese Kitchen in East Dallas<\/h2>\n<p class=\"body-text-paragraph\">The most refreshing Bib Gourmand recipient on Michelin\u2019s list of Dallas-Fort Worth restaurants is Ngon Vietnamese Kitchen on Greenville Avenue. Unlike the other Bib recipients in D-FW, Ngon is truly a casual, inexpensive restaurant. Owner Carol Nguyen brings some moxie to the restaurant as a female businessowner honoring the recipes passed down from her mom and grandmother. Noodles, rice and curries each cost about $20 to $25. Ngon Vietnamese Kitchen is at 1907 Greenville Ave., Dallas.<\/p>\n<h2 class=\"body-text-header\">Nonna in Highland Park<\/h2>\n<p class=\"body-text-paragraph\">Aging seems to be some restaurateurs\u2019 greatest enemy, but that hasn\u2019t been the case at Nonna, a nearly 20-year-old Italian restaurant in Highland Park. About a decade ago, our restaurant critic noted that Nonna \u201ccontinues to dazzle year after year after year,\u201d and Michelin\u2019s Bib Gourmand award in 2024 suggests that\u2019s still true today. The menu changes regularly \u2014 a great way to keep this restaurant fresh. Nonna is at 4115 Lomo Alto Drive, Dallas.<\/p>\n<h2 class=\"body-text-header\">Michelin\u2019s Recommended restaurants in Dallas-Fort Worth<\/h2>\n<p class=\"body-text-paragraph\">Recommended restaurants are eateries are worthy of attention, but they don\u2019t meet Michelin\u2019s rigorous standards for 1-, 2- or 3-star status, and they weren\u2019t chosen for the Bib Gourmand, which notes \u201csimple yet skillful cooking,\u201d and often at an affordable price.<\/p>\n<p class=\"body-text-paragraph\">Michelin\u2019s Recommended restaurants list includes dozens across the state. Here are the Recommended restaurants in Dallas-Fort Worth:<\/p>\n<p class=\"body-text-paragraph\"><b>Barsotti\u2019s<\/b>. Cuisine: Global. 380 Melba Street, Dallas.<\/p>\n<h2 class=\"body-text-header\">What\u2019s next for the Michelin Guide Texas<\/h2>\n<p class=\"body-text-paragraph\">Michelin will continue rating restaurants across Texas until at least 2027. The next Michelin ceremony is expected to be in the fourth quarter of 2025 \u2014 about a year away from the inaugural announcement on Nov. 11, 2024.<\/p>\n<p class=\"body-text-paragraph\">Restaurants that have received a Michelin star will be challenged to maintain it in the future. Restaurants without a star can strive to get one next year.<\/p>\n<p class=\"body-text-paragraph\">\u201cIt\u2019s the very beginning of the journey between the Michelin Guide and Texas,\u201d Poullennec said.
